This was our dinner tonight. Chicken Stroganoff with pasta and green beans. Normally Mondays are meat free here, but a freezer mishap on the weekend meant the meal plan needed changing around. So Meatfree Monday will happen on Wednesday this week, and Wednesday’s planned Beef Stroganoff was made today with the chicken that was accidentally thawed out 🤦‍♀️But that’s the thing with meal plans - they don’t have to be rigid. And when you have easy, flexible recipes that use pantry staple ingredients, it’s simple to switch things around when circumstances change (or your kids don’t close the freezer door properly 😵‍💫).
