This is quite possibly my favourite out of the cake recipes I’ve developed over the years. It reminds me of those good old fashioned date rolls made by the CWA ladies you could buy at the local fundraiser cake stall (and you could totally sub the figs for dates if you prefer that flavour).

Prep for this week was pretty easy - last week’s baking stash is still going strong, so there wasn’t as much to do today. This week we have:- Biscoff cheesecake overnight oats for my work breakfasts, and chocolate chia pudding for the youngest child. - loads of fruit & veg prepped, plus some cheese, olives & meat sticks ready for the kids to make snack packs for school with crackers- proteins for the week are leftover roast beef from dinner, or Greek marinated chicken breast- and I got in some dinner prep for tomorrow too: roast pumpkin and chickpeas soaking for pumpkin falafelDinner plan for the week:Mon - Pumpkin Falafel (in wraps with hummus & tabouleh)Tues - Vietnamese Pork Meatball Bowls w rice vermicelli, veg & herbs Wed - Chicken Panang CurryThurs - Chicken Parmy w roast spuds & rocket salad Fri - YOYO (You’re On Your Own)Have a great week! #mealprep #schoollunchbox #sundayprep ... It’s been a while since I’ve shared a Sunday prep session, but back to school and back to work means getting organised for the week, so here we go:Breakfasts - 2 x cottage cheese Biscoff overnight oats for my work daysGF high protein pancakes for the kids Snacks: GF brownies and GF Weetbix slice for the freezer stash, fruit washed & ready to pop in lunchboxes or on top of breakfasts Lunches: A mountain of cornflake crumbed chicken tenders, veggie sticks and ranch dip. Some will be dinner tonight served with buffalo sauce & waffle fries, and the rest will be for the next few days of lunches. Dinner plan for the week:Mon: Tofu Pad ThaiTues: Beef Burgers (will make extra patties for lunch the rest of the week)Wed: One pan wonder -boneless whole chicken baked on top of lemon garlic potatoes, butter beans & green beansThurs: GF Gnocchi Traybake - chorizo, tomatoes, capsicum, onion, zucchini, gnocchi - topped with parmesanFri: YOYO night (ie “You’re On Your Own” - Mum’s done cooking - find some leftovers or make a cheese toastie/scrambled eggs/noodles)Plus a couple of cakes ready to stack & decorate for a colleague’s birthday…Happy Back to School, everyone! #mealprep#backtoschool ...
