Easy Vegetarian Curry

We like to do Meatfree Mondays around here. We often have other meatfree meals during the week, and often there are only small portions in our “meaty” meals, but planning it in this way means that at least once a week we get some extra veggies in and it helps to make sure we’re not just relying on meat for our sustenance! But, with growing kids and an active life, we also need to make sure that we’re getting some protein in those meals, so I often turn to eggs, beans or lentils to fill that void. Just as in this delicious and easy vegetarian curry, where the addition of red lentils helps to thicken the sauce and add extra fibre and protein. This really is so simple to put together, then let bubble away, developing the flavours.

Lamb, Herb & Feta Meatballs

It’s hard to beat meatballs for a kid-friendly dinner – even more so if you serve them up with toothpicks. What is it about kids and food on sticks? Anyway, regardless of how you serve them, these little spheres of deliciousness are sure to be a hit at your place. The lamb mince makes them super juicy, the feta gives them some great extra flavour, and the hidden veggies give you that little “insurance policy” that some extra goodness is going in.

Too Easy Slow Cooker Pulled Pork

Who doesn’t love pulled pork? And who doesn’t love coming home to the mouth-watering smell of dinner already cooked and waiting for you? Heaven.

This pulled pork is so easy. Make up the marinade paste the night before, quickly rub it onto the pork in the morning and whack it in the slow cooker for the day – job done! All you need to do is make a simple slaw and grab some buns or wraps and you’ve got a guaranteed crowd pleaser for dinner.

Roast Chicken Seasoning and Ways with Leftovers

You know that tasty seasoning that store-bought barbecue rotisserie chickens are smothered in? The really more-ish stuff that makes you want to eat all the skin? Well, I love it. And so does my 4-year-old daughter. But I suspect that there are probably some ingredients lurking in there that I’d rather we didn’t eat. And, like most things, making your own at home is so much cheaper. So, I set about coming up with a seasoning for my roast chicken that was just as tasty. Super Salad Dressings

If you’re anything like me, you’re probably craving salads right about now. With all the excesses of the silly season, the desire for loads of fresh, crunchy veggies is strong. But the same salad day after day can get pretty boring. Changing the ingredients is one thing, but to take your salad to the next level, you need a tasty dressing. Not only does a dressing help your salad taste better, using a dressing with some oil or other fat in it will also help you to better absorb the nutrients in  your salad veggies.

Quick and Easy Bean Nachos

It’s been very quiet in here lately. The end of the year craziness will do that to a blog I guess. Rest assured I’m still cooking delicious food for my little family – if you follow me on Facebook or Instagram you’ll see some pics of it there.

I did a Facebook Live this afternoon as I was preparing this for an afternoon tea/early dinner for the kids before Little Athletics. I like to make sure they’ve had a good feed before we go to avoid the hassling for junk from the canteen, and this fits the bill perfectly.
