Broccoli Fritters

These are quick to whip up, taste great, and help you easily get more veggies into your day. Serve them up with some raw veggie sticks or on a salad for lunch or a quick dinner. If you can convince your kids to give them a go, they’d make a great lunchbox filler too.

Try them now while broccoli is in season, plentiful and cheap.

Broccoli Fritters

Ingredients:

2 medium heads broccoli, chopped into florets

1 brown onion, roughly chopped

1/2 cup flour (plain, spelt, chickpea, quinoa) – I used quinoa flakes blended into flour

2 tsp dulse flakes (optional – but adds some extra goodness)

1 tbsp nutritional yeast flakes (optional – but adds some extra flavour and goodness)

1/2 – 3/4 cup grated cheese (I used a mixture of tasty and parmesan)

2 tsp Dijon mustard

1 tsp each paprika and garlic powder

pinch of salt

3 eggs

Method:

Place the broccoli and onion in a food processor and process until finely chopped.

2. Transfer to a microwave safe bowl, cover and cook for about 7-8 minutes, until tender. Alternatively, you can dice the onion very finely and then steam the broccoli florets, chop finely and mix with the onion. I just find that cooking both together makes the onion flavour a little milder. Allow to cool.

3. Add all other ingredients to the bowl and mix thoroughly.

4. Heat a pan on medium heat and add a little olive oil. Shape balls of the mixture with slightly wet hands and flatten to patties in the pan. Cook on each side until golden.

5. Delicious served with a little squeeze of lemon juice.
