Traybakes are a great way to put a family dinner on the table with minimal prep and hands-free cooking. They’re also a fabulous way to avoid food waste because anything goes! This was our end-of-week effort tonight - skin-on chicken breast from @butcher_crowd, with chorizo, potatoes and loads of bits & pieces of veg. It took less than 10 minutes to prep, and was perfect to clear out the fridge before packing away our weekly @boxdivvy veggie order. This was our dinner tonight. Chicken Stroganoff with pasta and green beans. Normally Mondays are meat free here, but a freezer mishap on the weekend meant the meal plan needed changing around. So Meatfree Monday will happen on Wednesday this week, and Wednesday’s planned Beef Stroganoff was made today with the chicken that was accidentally thawed out 🤦‍♀️But that’s the thing with meal plans - they don’t have to be rigid. And when you have easy, flexible recipes that use pantry staple ingredients, it’s simple to switch things around when circumstances change (or your kids don’t close the freezer door properly 😵‍💫).
